Easter Basket Cake

Orange Chiffon cake in 10" tube pan. Decorate cake as basket. Fill basket with green-tinted coconut "grass" and candy Easter eggs.

Basket: Shape a nest for eggs by using a sharp knife to cut a sloping slice from edge to center of cake. Cut center no deeper than 1/2." Fill hole made by tube pan with cut cake.

Frosting: Make basket weave pattern in frosting on the sides of cake by drawing inch-long horizontal and vertical lines with tines of fork. Cover top of the basket with green tinted coconut.

Easy Fruit Desserts

1. Pineapple Upside-down Cake
2. Apricots and cookies
3. Fruit Ambroisa
4. Tapioca Cream with Peaches
5. Cherry Puffs
6. Strawberry Shortcake

Fruit Ambrosia
Make it with almost any fruit you have on hand.
Sprinkle the fruit (such as cut-up orange slices, bananas and apples, or pineapple) with confectioners' sugar. Chill. To dress up, top with plain or toasted shredded coconut, salted peanuts, or maraschino cherries just before serving.
